Ramadan Mubarak virtual fam! Here’s a super easy and quick recipe put together for you guys. The crispy crunchy pizza bomb is filled with cheesy umami goodness to light up your iftaar table. It is normally made with pizza dough but I’ve reduced some tedious steps of kneading and dough making. You can simply make this recipe using bread slices. I totally understand how it’s very hard to work during fasting. So! You can easily make this beforehand and freeze throughout the month. Your folks are going to love them!

Boneless Chicken (بغیر ہڈی والی مرغی) Half Breast or 175 grams (cut in small cubes) Onion (پیاز) 1 small (cut in half inch cubes) Capsicum (شملہ مرچ) 1 small (cut in half-inch cubes) Garlic (لہسن) 1 teaspoon (chopped finely) Lemon (یموں) 1 whole Tikka Masala Powder (تکہ مصالحہ پاؤڈر) 1 tablespoon (heaped) Red Chilli Flakes (کٹی لال مرچ) 1/4 teaspoon Black Pepper Powder (کالی مرچ پاؤڈر) 1/4 teaspoon Salt (نمک) to taste Cooking Oil (تیل) 1 tablespoon
Marinara Sauce or Pizza Sauce
Garlic (لہسن) 4 large cloves (finely chopped) Basil Leaves (تلسی کے پتے) 5 whole fresh or 1 teaspoon dried Cooking Oil (تیل) 1 tablespoons Tomato Purée (ٹماٹر کی چٹنی) 2 cups Light Brown Sugar (براؤن شوگر) 1 tablespoon Chilli Garlic Sauce ( ٹماٹر چلی گارلیک سوس) 1/2 cup (optional) Red Chilli Flakes (کٹی لال مرچ) 1 teaspoon Salt (نمک) to taste Oregano (اوریگانو) 1/2 teaspoon Thyme (جنگلی پودینہ) 1/2 teaspoon

Prepare the pizza filling by sautéing chicken and garlic in cooking oil. Add in all the spices (tikka masala, salt, black pepper, and red chilli flakes) along with lemon juice and cook completely on medium-low flame. If you do not have tikka masala you can use biryani, korma, tandoor, or kebab masala whichever is available in your pantry.
Cool the mixture at room temperature before adding capsicum and onion. It is very important to ensure there is no warmth left in the mixture otherwise the vegetables will release water which would not be pleasant.
If you already have pizza or marinara sauce, skip to step no. 4. If not, then prepare marinara sauce by frying garlic and basil in oil until garlic starts to turn golden. Add the rest of the ingredients and cook till the mixture thickens and reduces to a sauce. Addition of chilli garlic sauce allows it to preserve and adds acidity. You can use apple cider vinegar but adding chilli garlic is preferable because it adds other flavour components too. Set aside and cool completely.
Take bread slices depending on the mixture. Trim the edges of the bread. The edges will be used to make breadcrumbs. Roll the slices flat using a rolling pin.
Scoop a teaspoon of the chicken filling and place it in the centre of the bread. Add a dollop of marinara sauce and top with some grated cheese and oregano flakes. Do not overload otherwise it will be hard to shape the bomb.
Pinch the edges of the bread and place it in your palm. Twist it into a ball while slight pressing with the help of your palms.
Freeze the pizza bombs for 10 to 15 minutes so they hold their shape and are easy to coat.
Dredge the pizza bombs in whisked eggs and breadcrumbs. Ensure to seal completely and avoid cracks.
Deep fry in cooking oil at a medium temperature of 150 degrees Celsius or until slight bubbling occurs. You can even air fry or bake these pizza bombs.
You can keep them in a air tight container and freeze them up to 6 weeks. Enjoy!!
