Quick Fried Rice

Hi! Today’s recipe is as quick and simple as can get. My Quick Fried Rice involves tossing everything in a pot and cooking it over medium-high flame. This recipe takes about 15 minutes and is so time-friendly, especially if you’ve got leftover boiled rice. Serve them with the gravy or stews of your choice. They can be eaten alone and still get loved by all!


Ingredient List:

Boiled Rice (ابلے ہوئے چاول) 
	4 cups

Cooking Oil (تیل) 
	1.5 tablespoon

Butter (مکھن) 
	1.5 tablespoon

Garlic (لہسن) 
	1 tablespoon minced
	
Spring Onion (ہرا پیاز) 
	1 medium-sized bulb chopped

Baby Spinach (پالک) 
	1/2 cup chopped

Green Chillies (ہری مرچیں) 
	2 large sliced

Cabbage (بند گوبھی) 
	1/2 cup diced

Carrots (گاجر) 
	1/4 cup diced

Apple Cider Vinegar (سیب کا سرکہ) 
	2 tablespoons
Eggs (انڈے) 
	2 whole
Black Pepper (کالی مرچ) 
	1 teaspoon or according to taste

Salt (نمک) 
	to taste

Soy Sauce (سویا ساس) 
	2 tablespoons

Chicken Stock (چکن سٹاک) 
	1 cup

Chilli Garlic Sauce (چلی گارلک) 
	2 tablespoons (optional)

Paprika Paste (پیپریکا پیسٹ) 
	1 teaspoon (optional)

Capsicum (شملہ مرچ) 
	1/4 cup diced

Tools Required:

Cooking Pot
Kitchen Stove
Mixing Spoon
Kitchen Knife
Cutting Board

Steps:

  1. Soak uncooked rice in water for an hour. Drain the water and boil the rice in fresh water until completely cooked. Drain and set aside.
  2. Place a cooking pot over a medium-high flame and add oil and butter in it.
  3. Once they start to sizzle, add garlic and sauté for a few seconds.
  4. Add chopped white part of the spring onion and sauté till translucent.
  5. Add chopped spinach and once it starts to wilt, add the sliced green chillies.
  6. Add the diced cabbage and carrots along with some apple cider vinegar. Sautéing the vegetables with vinegar helps them retain their vibrant colour.
  7. Sauté the vegetables for a few seconds and add the eggs in.
  8. Scramble the eggs and once they are partially cooked, add salt and black pepper.
  9. Toss the boiled rice in and add soy sauce.
  10. Mix Paprika paste and Chilli Garlic Sauce together and add that in the rice. This step is optional for some colour. Gives a little bit of heat too.
  11. Finally, add spring onion greens and capsicum.
  12. Toss everything together until well combined. Make sure not to mix vigorously and to break the rice.
  13. Serve with your choice of gravy or eat as is!
